Colón Family Cookbook

This recipe I got from a co-worker. She has a Christmas Breakfast every Christmas Season for her family and friends. She always prepares this dish for that occasion and brings the leftovers to the office the next day. We all enjoy it at the office. It's a good dish to prepare when you have overnight guests. It reheats very well.

Meats and Poultry: Ruthy's Egg Bake
Name Ingredients
  • 1 lb. ground sausage or bacon
  • white sliced bread to cover bottom of pan (no crust)
  • 1 cup grated cheese (cheddar, monterey jack)
  • * 6 eggs
  • * 2 cups milk
  • * 1 teaspoon salt
  • * 1 teaspoon dry mustard

    * mix these items in bowl.
  1. Grease a 2-quart casserole pan. Put pieces of bread on bottom of pan covering bottom.
  2. Sprinkle cooked chopped up sausage or crumbled bacon on bread.
  3. Sprinkle grated cheese on top.
  4. Pour mixture of egg and milk on top.
  5. Cover and refrigerate overnight.

Bake at 350F for 35 minutes. [For 9x13 pan double only *ingredients]
