Vegetable Dishes and Salads: Judy's Italian Zucchini
Name Ingredients
  • 2 zucchini cut in 1 inch slices and then quarter
  • 1 tsp. crushed garlic
  • 1/2 white onion, chopped
  • 1 can S&W Italian Recipe peeled Tomatoes
  • 1-2 Tbs. olive oil
  • fresh parmesan cheese
  1. Saute garlic and onion in olive oil for a few minutes.
  2. Add the zucchini and cook for a minute or two. Add the tomatoes.
  3. Cover and let simmer for about 3 minutes.
  4. Sprinkle with parmesan cheese right before you serve it.
