Vegetable Dishes and Salads: Judy's Italian Zucchini
2 zucchini cut in 1 inch slices and then quarter
1 tsp. crushed garlic
1/2 white onion, chopped
1 can S&W Italian Recipe peeled Tomatoes
1-2 Tbs. olive oil
fresh parmesan cheese
Saute garlic and onion in olive oil for a few minutes.
Add the zucchini and cook for a minute or two. Add the tomatoes.
Cover and let simmer for about 3 minutes.
Sprinkle with parmesan cheese right before you serve it.
