Desserts: Cathy C's Lemon Cake
Name Ingredients
  • 1 pkg of lemon cake mix, pudding in the mix.
  • 1 4-serving pkg of lemon pudding
  • 3/4 cup of oil
  • 4 eggs
  • 3/4 cup of water
Icing:

(you can vary these to taste)

  • 2 cup powdered sugar
  • 1/2 cup lemon juice
  • 2 tbsp melted butter
  • 2 tbsp water

Beat together until smooth.


Instructions

  1. Mix together w/electric mixer. (follow directions for cake mix for oven temp)
  2. Bake for 25-30 minutes, until golden brown and toothpick comes clean.
  3. Let stand for 5 minutes. Poke forkholes all over cake and then pour icing
    over cake, allow to continue cooling.
