Colón Family Cookbook

Judy has been so kind as to share her famous Spinach Salad recipe with us.  This salad was in such a demand on the West Coast that Judy actually had to go on strike from making it!!  Well, now we can all make it on our own time.  Thank you Judy!

Serves 10-12, make in a 9x12 dish

Vegetable Dishes and Salads: Judy's Spinach Salad
Name Ingredients                                                      Dressing:
  • 2 bunches of spinach, washed and torn
  • 3 celery stalks chopped
  • 1/2 to 1 cup frozen peas
  • 1 8oz can sliced waterchestnuts
  • chopped green onions to taste
  • 1/2 cup of mayonnaise
  • 1-2 tbs. apple cider vinegar
  • 1-2 tbs. sugar
  • a sprinkle garlic salt

Toppings:
shredded sharp cheddar cheese
bacon bits
2 hard boiled eggs, chopped (optional)

Instructions
  1. You may toss all the ingredients if you want to serve immediately.  Add toppings.
    OR Just layer the first 5 ingredients and spoon the dressing over the salad and add toppings.

Refrigerate overnight.
